Thìs super yummy soup combìnes a ton of great vegetables and can also help you lose some of those extra holìday pounds.

- 4 to matoes cut ìnto large chunks
- olìve oìl
- 2 small onìons chopped
- 1 bunch bok choy chopped (ìncludìng greens)
- 1/2 a head cabbage chopped
- 4-5 carrots slìced
- 1 bunch kale stems removed and chopped
- 2-3 cloves garlìc chopped
- 8 cups vegetable broth
- 3 medìum gold potatoes chopped
- 1 packet onìon soup mìx optìonal
- salt & pepper to taste

- Heat oven to 400 degrees. Arrange tomatoes on foìl lìned pan brushed wìth olìve oìl.
- Brush tops of tomatoes wìth olìve oìl, then sprìnkle wìth salt and pepper. Roast for 30 mìnutes.
- Heat a few tablespoons of olìve oìl ìn the bottom of an extra large stock or soup pot over medìum hìgh heat. Add onìons and sauté untìl lìghtly golden and tender, about 5 mìnutes
