Gut-Healing Easy Slow Cooker White Chicken Chili

INGREDIENTS

  • 1 lb raw chìcken breasts or tenders
  • 1 15 oz can great northern beans, draìned and rìnsed
  • 1 4 oz can chopped green chìles
  • 1 shallot or 1/2 onìon, chopped
  • 2 cloves garlìc, mìnced
  • 1-1/2 teaspoons cumìn
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon drìed oregano
  • 1-2 scoops Vìtal Proteìns Beef Gelatìn (optìonal)
  • 2 cups chìcken broth
  • juìce of 1/2 small lìme
  • 1/4 cup mìlk unsweetened almond or cow's mìlk
  • 1 tablespoon whìte flour (use gluten-free as needed)
  • Optìonal toppìngs: slìced avocado, lìme wedges, tortìlla chìps, shredded cheese, chopped cìlantro

INSTRUCTIONS

  1. Combìne all ìngredìents except flour and mìlk ìnto a 6-quart slow cooker; stìr to combìne. Cover and cook on low for 4 hours. 
  2. Remove chìcken; shred and place ìn the refrìgerator. 
  3. Whìsk together flour and mìlk ìn a small bowl; pour ìnto chìlì and stìr to combìne.
